Baked Trout with mashed potatoes and celery




A simple recipe for Baked Rainbow Trout with Vegetables and mashed potatoes and celery . Make the healthiest dinner you can imagine without much effort. Turns out perfect every time. You will need for 2 portions :
  • 2 whole trout cleaned 
  • 4 potatoes 
  • 1/2 celery 
  • 4 tbsp extra virgin olive oil 
  • 1 onion 
  • 4 small tomatoes 
  • small handful flat leaf parsley and thyme 
  • salt and freshly black pepper 
  • milk and butter for mashed potatoes 
  • red chilli pepper 
  • lemon 
  • carrot and pepper 
  • garlic                                                                             
STEPS :


  • Salt the trout from the inside and outside.Let it marinate for a bit.
  • Place all the vegetables in a large bowl after you sliced them. 
  • Place the fish into the Center and add salt and pepper. 
  • Bake for 30 minutes until the veggies and fish are cooked through .
  • In the meantime ...Place potatoes and celery root in a large pot. Add water to cover . Bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 25-30 minutes. 
  • If you prefer a rough-textured purée, mash with an electric beater or a hand-held potato-masher.) Add some butter and milk , salt and some dried veggies . 
  • In a small saucepan, combine the oil, butter, garlic, salt and a few grinds of pepper. Cook over moderately high heat, stirring often, until the garlic is softened, 1 to 2 minutes.Toss the hot fish  with the olive oil sauce and parsley and serve.
