Orange cake with chocolate and almonds




Ingredients
5 eggs
5tsp flour 
5 tsp sugar 
1 baking powder 

250gr mascarpone 
4eggs

4tsp sugar / honey 
100 gr whipped cream 

3 orange 
1lemon essence 

220 gr dark chocolate 
1 gelatine
150ml water
30gr cacao 
80ml cream for whipped cream 

Steps : 
  • Preheat the oven to 200°C
  • In a large bowl, beat the egg whites until pale and fluffy.
  • Mix the yolks with sugar easily.Sift in the flour with the baking powder, stirring well.
  • Put the composition in  a round shape , greased with butter and covered with flour  and bake at 180 degrees C.
  • For the cream : put in a bowl sugar and eggs and mix well. Add mascarpone and whipeed cream and mix until a consistent cream forms. 
  • Cut the cake in two and let it cool. The first top cake sprinkled with lemon and orange juice . Put the cream on it and some slices of orange .
  • For the chocolate icing, heat the chocolate in some water and cream in a saucepan over a low heat until the chocolate melts. Add the gelatineand the cream for whipped cream . Remove the pan from the heat and whisk the mixture until smooth, glossy and thickened. Set aside to cool for 1–2 hours, or until thick enough to spread over the cake.
  • Decorate with some slices of orange and some almonds.
